Even in today?s economy, Americans still love going out to eat. And these days, when people do choose to go out and spend money on dinner, they want to enjoy the full experience. More and more often, reports Restaurant Management, that includes after-dinner drinks. Here are some ways restaurants are profiting from this trend:
Consider offering after-dinner drink flights, which can be shared with a group of friends, prolonging the enjoyment (and cutting the cost). For example, some restaurants offer grappa, port and dessert wine flights. Restaurateurs who use flights say they can be priced less than a la carte drinks, making them more appealing to customers.
One eatery in the article decided to go beyond the traditional sweet or coffee-based after-dinner drinks, offering a ?deconstructed? cocktail served on a plate.
Another idea is suggesting pairings of after-dinner drinks with specific dessert items. Also be sure to offer less-sweet drinks to appeal to a wider range of tastes.
Once you?ve got after-dinner drinks on the menu, getting servers to promote them is key. Restaurant owners profiled suggest having the staff try all the drinks so each can find some favorites they love and will be eager to suggest to guests. Also have your servers thoroughly trained in suggesting pairings of drinks with desserts. Some restaurants even use carts to display after-dinner drinks.
Of course, since after-dinner drinks are typically enjoyed with or instead of dessert, servers should mention dessert and after-dinner drink options while the guests are ordering the meal, just to ?plant the seed,? as one restaurant owner says.
Does your eatery serve after-dinner drinks?
